Manna from Ash tree, popular good, healthy sap

White stalactites generated by the hot summer sun
instead of the harsh winter cold. Long
white streams flowed from the signs engraved on burning
ash trunks and not from droplets of solidified
water. From this “paradoxical miracle” the Manna comes
to life.

Perhaps only the sky, which the Bible says fed the
Israelite people, can know how much of uniqueness there is in its existence. Today, the traditional
uses of Ash Manna for its beneficial
properties are the input of modern scientific
research that takes this cultural baggage to its own
to enrich it with innovation.

Knowledge of Manna, of what it actually
is, is today the prerogative of a few. The reason
probably lies in the territorial and
environmental exceptionality of this product. Manna, in its
original state, is the processed sap preserved from the
trunks and branches of Ash trees, in particular of the
Ornus and Angustifolia genera which, following
an incision, comes out of the bark and solidifies.
The process that leads to the gushing of
this bright white sap is surrounded by
an aura of charm.

Man says “what”,
nature says “when”

The art of engraving of our mannicolculturists,
allows the release of a cerulean liquid
from the bark of the Ash subjected to
solidification following contact with the air, giving life to Manna. Such a unique product
cannot fail to be generated in equally
exclusive agronomic and soil-climatic conditions.

Obtaining Manna is a troubled process
made of waiting, prayers for an abundant harvest and, last but not least, a lot of
technical skill of the manniculturist who remains
the only true protagonist of the process of
harvesting Manna, given the absence of mechanical aids. The methods of
obtaining Manna, in fact, have always
remained the same for centuries. The sap, among other things,
would not come out of the bark of the ash tree
in the absence of particular climatic conditions
and without the dry and precise incisions due
to the knowledge, patience and care of man.

The raw Manna represents the most consistent,
rich and precious part of the harvest for our
processing. The sap that naturally solidifies
progressively along the trunk inevitably brings
with it, during the harvest, traces of precious bark.
